BC Fresh New Nugget Potato Recipe (Warba Potato)

4 cups BC Fresh New Nugget Potatoes, quartered

1/2 tsp smoked paprika

1/4 tsp ancho chili powder

2 teaspoons grapeseed oil

1/2 cup red pepper, chopped

1/2 cup green pepper, chopped

2 teaspoons grapeseed oil

1/2 teaspoon salt

1 cup haberno cheddar cheese

2 sprigs of parsley

Preheat oven to 350 degrees Fahrenheit. Add the potatoes to the a baking pan. Sprinkle smoked paprika, ancho chili powder on top. Drizzle oil on top. Bake for 20 minutes or until soft in center. Plate the potatoes on two plates. Sprinkle red and green pepper on top. Drizzle oil on top and sprinkle salt. Divide the cheese and microwave for about 30 seconds or until cheese melts. Garnish with a sprig of parsley. Serves 2.

    I like this idea and the recipe. yummy.. I love potatoes. This might be nice with thinned potatoes. Thin like coins.. can’t remember the name for that, or just thinned sliced as a side dish too placed in a glass pan in the oven.

    Or you might like this idea using a non stick surface like parchment paper place onto a pan. place your spiced and oiled thinly sliced potatoes into a bowl, mix…. take slices and stack and in between each potato thin…. place a little lovely haberno cheese … and there you have your potato hills…appetizers…place a dash of chive on top….you have reached your destination.
